Vegan day 2: Juicing intro

If you have $200– buy yourself the gift of life: A JUICER! Not a blender but a JUICER! Be careful in your purchase. The less expensive ones may not extract as much juice or items may get stuck. I made that mistake with my 2nd juicer that I keep upstate– $100 Jack LaLanne plastic one.. go for stainless steel. Breville is my favorite! Unless you make mad money– then go for the juice press machines like a Norwalk. Those extract the juice and then press the pulp for the most nutrients!
BTW if you think you don’t have $200– give up coffee for 1 or 2 months– you will improve your health all around! If you think you don’t have room in the kitchen… toss your microwave out the window lol. Ready — set– go!


Today’s vegan meal– and really everyday’s vegan meal is a juice! You can eat or drink your calories ya know. Those eating a typical American diet like to do both.. and at every meal lol. It only takes 3500 calories to gain a pound. I live on juices– wish I could juice even more but if you haven’t already gathered… I’m a bit on the lazy side. Juicing requires prep and cleaning– but it’s worth it.


Carrot- Apple- Beet- Ginger- Kale- Lemon
I use 5 or 6 carrots, 1 or 2 apples, 1 beet, an inch or so of ginger, a bundle of kale and a peeled lemon.
This is my favorite juice. I try to get my greens in and the other veggies really taste good so you don’t taste the bitter of the greens. I switch up the greens– kale, spinach, swiss chard, collard greens, parsley and so on!!!! I’m not a great cook and I’m not a big “leafy green” eater so this is my time to get the greens in– big time!!! One thing I have learned in my classes is that “leafy greens” are probably among the healthiest foods in the world! Loaded with vitamins and minerals!






I record this as 150 calories. These are good calories and good carbs!!!
I would keep the veggie juice with just veggies– and apples! Digestion requires different enzymes for fruits then vegetables. Keep it simple– we will get to fruit juices and shakes another day! lol


It’s best to juice right when you are going to drink it to maximize the nutrients. However, lol, I’m a tad lazy like I said– so I make enough for 2 more days! It’s all relative– a 2 day old fresh veggie juice is still a million times better than a diet coke, red bull, juice concentrate, bottled juices, processed drinks etc!!


You can find juice stores out and about too– remember it’s always best to make it yourself though. This way YOU can clean your veggies and YOU can buy organic if you choose to do so!


My goal is to JUICE ONCE A DAY!
