Vegan day 27: Toasted tortilla with hummus, tomato & fig

It’s a far cry from my college year pizza bagel days. What was it called? The Freshman 20? It was more like the Freshman 50, for me anyway! Just for fun, I googled that and to no surprise it’s up to the Freshman 60 now, according to the urban dictionary. In case you are luckily unaware of the Freshman 20- it’s when one goes off to college and comes back much heavier due to a change in eating habits and further introduction into the fast food nation that we live in- especially on a student’s schedule and budget. 


If I recall correctly, I survived on daily pizza bagels made in my dorm room toaster oven. It consisted of processed white bagels, processed cheese slices or easy cheese squirting from a can lol and jarred tomato sauce- probably ragu! Not much nutritional value here!


Although my time constraints may not have changed, my food choice definitely have. No white carbs or dairy for me– thank you very much! Anyway, I wanted something quick and fun- this is what I made on the go and in less than 3 minutes:




Toasted tortilla with hummus, tomato & fig




INGREDIENTS: Organic Sprouted Whole Wheat, Filtered Water, Organic Unhulled Sesame Seeds, Organic Sprouted Whole Soybeans, Organic Sprouted Whole Barley, Organic Sprouted Whole Millet, Organic Sprouted Whole Lentils, Organic Sprouted Whole Spelt, Sea Salt.

  • Hummus
  • Tomato
  • Fig
  • Cilantro
  • Parsley
  • Nutritional yeast 
  • Hot sauce (optional)

I literally toasted the tortilla for a minute in a toaster oven, put the hummus, tomato and sliced fig on– and then toasted for an additional minute! Add the nutritional yeast and hot sauce to your liking!
