Vegan day 29: Crimini mushroom burger on a sprouted muffin

“One all veggie patty, special vegan sauce, dandelion greens, nutritional cheese-like yeast, pickles, onions on a sprouted seed bun!” haha


If only the veggie industry had the marketing magic of beef industry favorites like the McDonald’s Big Mac or the dairy industry’s “Got Milk”…  Hmmm I feel another holistic career opportunity lurking in the back of my mind. I love marketing- I love slogans- I sang that Big Mac song in less than 3 seconds!

In honor of trying to set a good example for something yummy and fun, even for the non-vegan, I choose to actually COOK a veggie burger from scratch. I could have just heated up a Dr. Prager’s burger since I have homework deadlines due on Monday but noooooooo– I had to procrastinate by trying something new and different. lol- I think that I may just learn how to cook by the end of this blog– pretty cool fringe benefit huh?


Friends have been sending me recipes plus I have a few vegan cook books- the thing is time! How much time should one spend on their health? By the looks of the rapidly rising rates of obesity, diabetes and heart disease- I would say more than we are currently spending, as a nation. SO I took some time today. My friend Arlene has a cafe in Trinidad, she sent me this recipe on Facebook to help my vegan quest! Thanks Arlene!


* 1 1/2 pounds (685 g) cremini mushrooms
* 1/2 cup (30 g) fresh parsley
* 2 tablespoons (30 ml) olive oil, divided
* 2 large-size yellow onions, finely chopped
* 3 large-size garlic cloves, minced
* 1 1/2 to 2 cups (165 to 220 g) bread crumbs or cracker meal
* 3 tablespoons (45 g) tahini
* 2 tablespoons (30 g) hoisin sauce
* 3/4 cup (85 g) toasted pecans or walnuts, chopped
* 3 tablespoons (45 ml) tamari soy sauce
* 1 teaspoon (2 g) dried oregano
* 1/2 teaspoon dried sage
* salt and ground pepper, to taste





I did pretty good at staying with the recipe and I used whole wheat bread crumbs! I added Grapeseed Vegenaise and hot sauce to the final product! The only thing is- that I need a small food processor. I am the only infomercial junkie without one! I will get one soon! 


By the way- I think I am one step closer to making veggie (meatless) balls! Look what I did with the leftover mix! It’s the simple things in life that get me so excited!
