Vegan day 56: Chick-pea salad on whole wheat pita

Whitney from ecovegangal calls it a chickpea “tuna” salad sandwich at $1.50 and 5 minutes. She put together a wonderful video on eating vegan with 13 suggestions to eat healthy vegan meals for less than $2 and 15 minutes. I came across this site while watching some tweets on my newly formed twitter page which is geared more towards my vegan and health food desires. It was originally a tweet from another of my favorite vegans- Honey LaBronx, the vegan drag queen. 


Twitter is fun– I’m really a face book fan thus far but slowly picking it up! I will be attempting the homemade seitan from Honey’s show soon. I posted the video from ecovegangal on my fb page and also on a friend’s page who recently went vegan for lent. Later at work she mentioned the chick pea salad sandwich so when I got home at 4am– I made it– and ate it! lol Who cooks at these hours? I know- don’t eat before bedtime- some habits are hard to break!


I partially hand mashed an organic can of chick peas in a bowl. Then I added chopped tomatoes, carrots, celery, pickles, 2T of vegenaise, kelp granules and pepper! I made mine on a toasted whole wheat pita and then made a bunch of wraps for work the next day!

I am generally a tofu or soy wrap fan. It’s interesting how easy it is to forget the basics. There are so many protein type foods that can be made into salads or combined with fresh vegetables –– just for wrapping and sandwiches! So easy and so in expensive! I hear way too often that it’s expensive to eat vegan, healthy or organic. This video from ecovegangal clearly shows many easy and affordable ways!


Chick- peas, also know as garbanzo beans made the list for the World’s Healthiest Foods. The brand I used was EDEN, which have no saturated fat, less than one gram of sugar and little sodium at 30mg. They also provide a good source of:

  • Protein (7 grams per 1/2 cup)
  • Dietary fiber (5 grams per 1/2 cup)
  • Iron 8% RDA
  • Molybdenum
  • Manganese
  • Folate
  • Magnesium 
I don’t really use any canned products except for beans and occasionally tomato sauce. If you do use canned- use organic if possible. The best method however is to soak dry beans overnight. If you really want optimum health- go ahead and sprout them! More to come on sprouting! Enjoy!
