Vegan day 59: Kale BOCA burger with a side of beets

“A burger and fries is still a burger and fries!”


It was only yesterday that I said that and now look what happened– I craved it! If you are in the mood for a burger- make your own! Sure it’s best to make the burger from scratch, however I’m not at that level yet! I did decide though to put together a healthier version of a burger and fries. This is what I call my 
Kale BOCA burger on an Ezekiel roll with beets on the side. After all, they say KALE is the new BEEF! 

Yes, somehow, pop chips snuck in there! A real kale burger would have be great– I had something close to that once– I will have to figure that out soon! I chose a VEGAN BOCA BURGER today! I was never a fan of Boca— more so, I liked Dr. Praegers however, they are growing on me fast. I added fresh organic kale, tomato, vegenaise, a drop of hot sauce and kelp flakes. I had some beets in the refrigerator which made a nice healthy side dish. At the last second I gave in too the pop chips. Are pop chips healthy? Nah.. Unhealthy?.. Probably a bit- I mean it’s not a live food right! Is it healthier than other chips?- I believe so! In the end.. Ezekiel is healthier than white bread and pop chips are healthier than fries. Baby steps! It would have been better for me to stop after the beets, however those pop chips were staring at me! Back in the day my staff would buy me gummy bears to keep me in a positive fun mood. Funny, because sugar can quickly make people moody, anxious and hyperactive (especially kids). Now that I don’t really eat candy and especially that with gelatin (not vegan or vegetarian), they buy me pop chips. This is just lovely on occasion but now the supersize pop chips? No- please stop! Thank you for the wonderful gestures. Let’s stick with seaweed snacks, dried fruit and avocados. Avocados?..  Don’t ask how that started.. just know that I need to make guacamole soon! 


The calories here are about 400-450. That’s about the same as a quarter pounder at McDonald’s with no sides- add the fries and you are looking at about 900 calories and doubtfully any nutritional value! With todays type of vegan meal- animals are saved; and protein, vitamins, minerals and fiber are consumed!
