Vegan day 4: Lentils (tomato base)
LENTILS are a superfood!
- High in protein 17.9g per cup
- High fiber 15.6g per cup
- Low fat
- Low in calories 230 calories per cup
- Has twice as much iron as most legumes
- Higher in B vitamins and folate
- High in molybdenum, magnesium, calcium, mangenese and tryptophan
- Contain phytonutrients including proanthocyanins and catechins for antioxidant protection
“Lentils lack only two of the 20 available amino acids that combine for protein. And if the lentils are sprouted, those two missing amino acids appear, offering the complete package of 20 amino acids. Naturally high in fiber and low in fat, lentils aid digestion and elimination with a low glycemic index that stabilizes blood sugar and helps prevent diabetes.” ~ NaturalNews.com
Today’s highlighted VEGAN MEAL is lentils made with a tomato base!
I used a full 15 oz package of organic green lentils. Added chopped potatoes, carrots, onions, garlic, ginger and tomatoes. I used one can of tomato sauce and one box of vegetable broth– add water too!
I cooked this in MY SECOND FAVORITE KITCHEN APPLIANCE:
MY CROCK POT!
Remember my juicer is first!
