Vegan day 158: Juicing with cucumbers and celery
I am a big fan of “carrot, apple, beet and kale juice”- and top that off with ginger and/or lemon juice anytime!
I juice almost everyday! I have come along way but sometimes I feel like I still have a juice journey ahead of me! I believe in juicing and find it to be incredible for our bodies optimum health and vitality. I certainly wouldn’t mind getting into the habit of juicing twice a day– at the very least it would put better nutrition into my body then some of my vegan restaurant meals or sweets that I am drawn to so magnetically.
I overheard someone say they were juicing cucumbers and celery and the thought crossed my mind- hey why are those not staples in my juicing? It’s interesting how quick one gets into a routine when the sky is really the limit- well the garden actually! The great thing about cucumbers and celery are that they are so liquid rich! When you put those through a juicer – you get a lot of juice.. as opposed to say.. kale! I juice kale by the bunch per serving- that’s a lot of kale! I decided today to skip the beet and instead use the cucumbers and celery. It was delicious I have to admit!
Cucumbers
- Low in calories and contain no fat
- Known to be helpful for healthy skin
- Contain lignans which are known to assist in reducing the risk for cardiovascular disease
- High in antioxidants and bioflavonoids
- “Rich source of triterpene phytonutrients called cucurbitacins” *(1)
Celery *(2)
- Alkalizing
- Vitamin A in the leave
- Vitamins B1, B2,, B6 and C in the stems
- Potassium, folic acid, calcium, magnesium, iron, phosphorus and sodium
- Known to be helpful in reducing cholesterol and blood pressure, assisting proper elimination, acting as a diuretic and relieving inflammation
- Dr. Oz says to eat the celery heads too- “the leaves actually have more magnesium than the stalks. A higher magnesium intake has been shown to reduce your risk of type 2 diabetes by up to 23%.” *(3)
Recipe today:
Kale (bunch)
Carrots (2 small bags)
Apples (2)
Cucumbers (2)
Celery (3/4 stalk bunch with curly heads on)
*This made 2-3 supersize servings
