Vegan day 224: Portabella filets
Today I decide to stay away from all processed foods … however, I did cook! Coming off a raw diet is like entering the world again but with different eyes. I feel like I am cheating but really I am not. I believe this was the first real meal that I cooked full on. Sometimes I call portabella my “steak”. Whenever I BBQ with my friends this is my food of choice on the grill or a vegan burger. I always say to be careful with my “steak”.. but I didn’t feel like using that word here today because it reminds me of beef so I changed it to “filet”. That is what it looks like- strips of delicious high-end food!
I prepared this excellently with the one exception of a little too much salt somewhere. I think while I was eating raw vegan I allowed myself a tiny bit more salt. Now that I am incorporating other vegan foods it’s best to slide back on this because EVERYTHING HAS SALT lol!
Bottom line- this meal was off the hook! Downside- I paid for it for 4 hours with a stomach ache from either the cooking or the mushrooms or a combination of the two. Someone remind me not to eat like this before work– or better yet– to switch back to a raw vegan diet!
Portabella filets
First I sautéed some onions, ginger, sun-dried tomatoes, scallions and fresh oregano in coconut oil. I sliced up 2 portabella mushrooms after cleaning them well and scraping off the black underside mesh part. I added mirin cooking wine and tamari. OK so there is the salt factors.. sun-dried tomato, mirin and tamari. I really didn’t need to add a large teaspoon of sea salt on top of that.. but I did.
