Vegan day 227: Italian vegetable medley

It fascinates me to watch as I move some meals from raw vegan to vegan. It’s as if there is a whole new realm of opportunity– or maybe just perspective. It’s not that I don’t want to be raw because I almost feel guilty but it’s as if I have a newfound APPRECIATION for what I may have previously viewed as a limited eating lifestyle. I honestly would like to stay mostly RAW but it’s interesting to watch and feel the emotions as I continue to allow some cooked meals back in.

This meal was more about the vegetables than any pasta equivalent. I cut up fresh veggies:
Broccoli
Garden tomatoes
Sun-dried tomatoes
Garlic
Onions
Garden basil

I put together a saute using some olive oil, a little water and the vegetables.
I added the konjac noodles since my friend had wanted to try them. The meal was fulfilling due to the mix of the vegetables especially the broccoli. It’s super healthy to include the cruciferous greens whenever possible.
