Vegan day 131: Spaghetti squash

 

Spaghetti squash is amazing! 
Actually, this began as an introduction of the konjac noodles from an earlier blog to a friend of mine who had never tried them. They are new and different for many people. The taste may have to be acquired but you can get used to it- I can get used to anything with zero calories lol. Yes I said it– zero!
 
This was about to be another routine dish with these noodles but then I saw some spaghetti squash at the farm stand by my place so I had to give it a try. I have had spaghetti squash a few times before but I never really made it myself. I figured I would add this to the angel hair konjac noodles to give them a bit more bulk on the plate.
I told you I was a pasta-holic! Here I go again making versions of my long forgotten pasta dishes.  I find myself almost in binge mode- trying to “dig in” to this pasta, however, it just really doesn’t work. What I mean is the addictive part. The over-indulgent part. I just can’t seem to get that “binge-full” type feeling that I used to have… not that I’m looking for it lol.. but it is like giving candy to a kid. I can’t say no- so I jump in! At least I’m not getting that “OD” feeling… which is a good thing! 

 
I did eat a lot but… not really!
Spaghetti squash
Konjac noodles – angel hair
Zucchini – peeled in strips
Onions
Garlic
Tomatoes
Extra virgin olive oil
 
I baked the spaghetti squash whole for 45 minutes in a baking dish with about 3/4 inch of water in the pan. I turned it once. Once this came out it was so soft and tender. I sliced it in half the long way. It was like cracking open a big egg of spaghetti lol- it’s all ready. I just removed a tiny bit of the seeds and mushy part – then I took a fork and literally pulled the spaghetti out. 
In a saute pan, I started like usual- with the olive oil, onions and garlic- then adding the tomatoes after. Next I added the spaghetti squash (yellow in the picture), konjac angel hair noodles (white in the picture) and the zucchini strips. Of course I had to add my spices – some salt, pepper, red pepper, hot sauce, fresh basil and oregano. Enjoy!
