Vegan day 11: Winter wheat berries with cranberries and pecans

I’m always on the lookout for quality cooked grains when I’m out and about.. on the run lol. One of my favorite deli type places for healthier foods is on 14th street and 7th ave– Westside Market. You can choose from an array of ready to go containers with grains… mixed with a veggie or nut or tofu! Exciting lol.. these things are exciting for vegans who generally can’t find anything “healthy” and “vegan”– on the go! Anyway, my friend and I ordered it– we were so excited as I said.. lol.. then we go to eat it and it was like a sugar factory invaded our healthy choice!! So——– I decided to make it myself and I generally will prepare this dish once a month! A grain– a nut — and a dried fruit!


Winter wheat berries with cranberries and pecans

4 cups of wheat berries pre soaked for an hour
9-10 cups of water
1T sea salt
1T agave
2 cups dried cranberries
2 cups pecans
Rinse and then pre-soak the wheat berries for an hour. Drain the water and add 9-10 cups of fresh water. Cook until mostly all the water is absorbed. I think.. it was about 30-45 minutes. Lost track of time while I was changing over to iCloud.. hehe fun!
When the wheat berries are pretty much finished, lower the flame even more and add the dried cranberries. Leave for about 5-10 minutes and then shut the flame and add the pecans. The essential fatty acids in nuts are disturbed when heated. Finally drizzle a tiny bit of agave on top! 
That’s it– fun and festive! Can be eaten warm or cold- great to take on the go! I made enough to bring to work tonight!
