Vegan day 15: Ezekiel toast with kale tofu spread

I made a complete mess! I was in the mood for my slammin tofu scramble breakfast (which I will make another day)– but nooooooooooo– I had to crave an eggless omelette instead! I figured.. how hard can this be?? Well it’s hard! Keep in mind– I am no chef! I am not even technically a cook!! 


I quickly looked over some recipes but my impatience and adventurous side took over. I threw together some tofu, almond milk, turmeric and flax seed with water (which I read was a good egg substitute- yes maybe in a baking recipe but not in an omelette lol) I laid it out in a frying pan with earth balance vegan “butter” underneath. I sprinkled some hot sauce on it– it looked good. 




THEN I TRIED TO PEAK UNDERNEATH to flip it– yuk.. goo city!! That was not flipping anywhere anytime soon. I had sautéed some onions and kale in a small sauce pan which I was going to use inside the omelette with some nutritional yeast. Well- I just tossed it in. Now I really made goop. Bummed out but persistent– I made some fabulous Ezekiel toast– my favorite bread btw. I added the goop on top- it wasn’t horrible. 


I will make a vegan omelette– mark my words!!!!

INGREDIENTS: Organic Sprouted Whole Wheat, Filtered Water, Organic Malted Barley, Organic Sprouted Whole Millet, Organic Sprouted Whole Barley, Organic Sprouted Whole Lentils, Organic Sprouted Whole Soybeans, Organic Sprouted Whole Spelt, Fresh Yeast, Sea Salt.”
