Vegan day 19: Brussels sprouts baked with olive oil

When I was a kid, somewhere around 8- 10 years old, I remember my mother trying to get us to eat brussels sprouts. I don’t know why she didn’t just attempt the easier more fun vegetables– or perhaps she did lol! Saturday nights were kind of my mom’s day off from cooking– she was (and is) a great cook but you know– my parents would go out on Saturday nights! Pizza or something fun and easy was usually the choice…. and those dam brussels sprouts! Well we had an old solid oak table back then– still have it actually at the upstate summer place- many of my friends should know this as we have played many a drinking game on it!!! lol That old oak table did have a special purpose when I was 10– and that was… to hide the brussels sprouts! That was the only way to get through that dinner without getting in trouble. Times have only changed recently. I still went many years hating brussels sprouts– all because of my younger experience being pressured to eat them! Well, a couple of years ago– someone upstate made them– and they were FANTASTIC!!! I couldn’t even believe it! Two years went by, I am starting to eat more and more vegetables so I said let’s make those like before– the only problem was no one could recall who made them. I asked every upstate “chef”– those are my lovely friends who cook for everyone! No one took the credit and so I gave up!

It was my friend Rachna, the lesser likely of the “chefs” who I thought it might be. (Sorry hehe) She claimed the recipe– a simple one at that and the rest is history! I am in love with brussels sprouts now! Thanks Rachna!

Brussels sprouts baked with olive oil 


Wash the brussels sprouts, cut them in half and place in a baking dish. Put the oven on 425 degrees (for about 35-45min.)– and bake until they are soft inside and crispy on the outside. Olive oil, sea salt and pepper are all that is necessary but I’m sure everyone can add there own spice!
