Vegan day 36: Chocolate peanut butter cups ( Alicia Silverstone’s recipe)

“I don’t care what the… this is made of; these are the best peanut butter cups ever!” quote– my non-vegan brother! The reason I have never watched Jersey Shore is because I lived it growing up with my 2 crazy Italian brothers! Hopefully, you understand the depth now of just how good these taste! lol

Alicia Silverstone’s chocolate peanut butter cups– that’s right… Alicia is a vegan and major animal lover so there is no animal products here! Her book is The Kind Diet, an excellent book to read after Skinny Bitch!

Alicia’s recipe is for 12 but who can make just 12? This is the recipe as I made it for 24 chocolate peanut butter cups:

  • 1c earth balance buttery spread
  • 1 1/2c crunchy organic peanut butter
  • 1 1/2c graham cracker crumbs– might I tell you the dilemma here: I make it a point to avoid white flour so I search for graham crackers made with whole wheat and I FIND THEM– except they have honey in them! Although honey is healthy for many reasons- it’s NOT vegan! AY- so next step was to find them whole wheat and without honey! This was not easy, however I went to my favorite vegan marshmallow site Sweet and Sara and there they had them: vegan graham crackers, although not 100% whole wheat! The vegan grahams won out here over the quest for whole wheat! BTW- their marshmallows are incredible and their vegan chocolate “Rocky Road” bark — they are just not right making something that good and VEGAN! Plus, they are cut in triangles instead of squares which I can’t break again in half, therefore causing me to eat the whole piece– omg- this is a special occasion delight! I’ll let you know as my birthday approaches hehe!
  • 1/2c maple syrup grade B organic (she uses maple sugar or alternative sweetener)
  • 2c grain-sweetened, vegan chocolate chips or non-dairy carob chips
  • 1/2c soy or nut milk
  • 1/2c chopped pecans, almonds or peanuts

Directions: Melt and stir together the butter, peanut butter, crushed graham crackers and maple syrup. In another saucepan, heat the chocolate chips and non-dairy milk. Let both cool and then spoon out the peanut butter first into all 24 muffin liners (preferably in a muffin tin) and then spoon out the chocolate. I believe it’s 1T each mix into the liners. Top with nuts and put in the freezer!

*Honey is not vegan because it is made from bees. Beekeeping or bee farming is not natural. Queen bees are imprisoned, colonies split, antibiotics may be used, pheromone scents are manipulated and so on. (Engber, D. 2008.) Most people have this vision of animals providing food and nutrients to humans in this sweet soft natural way. The food industry is the furthest thing from natural. Animals are mass produced in tiny spaces, fed mass produced un-natural foods for their bodies (making them grow larger AND faster) which in turn, make them sick and then given antibiotics just to survive. All that “bad” stuff is passed on to the eater! Natural breeding and production cycles (such as lighting and season change for egg laying) are manipulated for quantity at the great expense of quality- and the expense of the health of the average person eating the Western diet… aka the Amercian diet.

*REMEMBER WHAT I ALWAYS SAY… “Just because it’s vegan, doesn’t mean it’s healthy” lol; this treat is amazing but it’s a sugar and fat rush.. for the record. Vitamin GEE disclaimer lol!
