Vegan day 37: Big bean burrito

Funny thing I am always talking about the Asian and Japanese cuisines and I forget all about dining out at Mexican restaurants. Mexican food is very accommodating to the vegetarian and even the vegan. Not that I’m pro-fast food but even taco bell has vegan options. I’ll be sure to make a slamming guacamole very soon!


In honor of Meatless Mondays, I will generally post something that’s easy, fun or delicious and perhaps, if I’m lucky- all three! Today was one of those days!


I wanted to prepare something “meaty” but without the meat. I wasn’t really in the mood for the flavored seitan products that I will probably cook soon. Then I remembered that beans and legumes are protein foods and great meat replacements!


Big bean burrito

kidney beans
onion
tomato
greens
nutritional yeast
hot sauce
spices
whole wheat wrap






I heated half of a chopped onion and a can of organic kidney beans (I’m sure it’s best to soak dry beans overnight and then cook them.) I strained the beans and let them cool. My burrito had some greens, the beans, diced tomato, nutritional yeast and hot sauce! This is a fun dish for Meatless Mondays as would be a veggie taco party!


I believe I have mentioned it before: beans are high in fiber which provides great health benefits for your body beginning with detoxification. Beans are a good source of protein especially when combined with a natural grain like brown rice. Kidney beans are a great source of molybdenum, folate, tryptophan, manganese, iron, phosphorus, copper, potassium, magnesium and thiamin (vitamin B1.) 


Remember too that nutritional yeast is loaded with B vitamins, protein and has a cheese like feel for the vegans!
