Vegan day 39: Basic miso soup

Perhaps it’s not so basic! A basic miso may just be miso broth and one or two items- this does have 8 ingredients. I held back on the brown rice lol- that would be not so basic anymore lol. It’s good to make brown rice a couple of times a week so you have it ready and on  hand for last minute recipes and cravings. Had I had it –today would be a not-so-basic miso soup! lol

I have been wanting to make my basic miso for over a week now. There are times, generally late at night when I just want something simple, warming and soothing for me and my body. I say me for the emotional me and my body for the digesting me.

I am having it as we speak- and then perhaps later before I go to sleep. FYI- it’s best not to eat right before you go to sleep. Our bodies are designed to sleep for many reasons and one for sure is to give the digestive system a break. The cells, tissues and organs are working overtime to process and rejuvenate our systems. Let the body work- don’t eat while you’re sleeping lol and don’t cheat yourself on sleep! I get my 8 hours a day!

BASIC MISO SOUP

water base
onion
ginger
carrots
seaweed
mushrooms
sprouted tofu
miso

I boiled water with onions, ginger and carrots that were minced or chopped. While this is coming to a boil or before- I soaked my HIJIKI seaweed for about 5 to 10 minutes. Next into the boiling water, I add the seaweed (after it’s soaked, rinsed and drained.) Shortly after, the mushrooms. Close to the finish I add the tofu and as a 2 minute finale – THE MISO!

Miso needs to only cook for 2 minutes- or you will ruin it’s beneficial affects!

Sprouted tofu is more known to be more nutritious and easier to digest. Miso is a fermented soy product. These are the more beneficial soy products to consume. There is major controversies surrounding soy. Please don’t fall into the processed soy bandwagon or the GMO monopoly. GMO’s are not a game- avoid them at all costs and voice your opinion in favor of GMO labeling from the GMO crop creators, Monsanto and companies like them.

GMO’s are genetically modified organisms used as a seed or as a pesticide on a crop production. The two biggest are corn and soy. Always BUY organic when it comes to these two crops as 90% of these markets are either pesticide ridden or built upon genetically altered genes allowing them to be pesticide resistant.
