Vegan day 63: Sugar snap pea sauté

My diet used to consist of pasta, cheese, gummy bears, charleston chews and diet coke! I really didn’t know what a sugar snap pea was. Even until recently, I would get them confused with snow peas, pods and edamame. When I realized you could eat the whole thing and that it actually tasted sweet and delicious- that was it! Now I buy these as snacks, add-ons to salads and stews and even by themselves as a vegetable sauté.

Bell peppers- orange and yellow
Extra-virgin coconut oil
Black sesame seeds
Five minutes

I heated a pan with 1T of extra-virgin coconut oil and then tossed in the sugar snap peas and bell peppers. I only sautéed this for 5 minutes – then I added the black sesame seeds. The flavor was outrageous- I had no idea! Sugar snap peas are a good source of vitamin K, manganese, vitamin C, vitamins B1 and B6, folate, iron and protein. Bell peppers supply impressive amounts of vitamin C and vitamin A. Remember to buy bell peppers organic as they are often at the top of the dirty dozen list for pesticides

Vitamin K is not a vitamin we hear about as much as the others, however it’s still helps with significant functions. Vitamin K is important for blood clotting and strong bones.
