Vegan day 64: Farro Italian stew

I love when people post nutrition items on my Facebook page- especially those I have never heard of. 
What is Farro? lol I had to find out and cook with it! It seems to me to be similar to barley. Farro is a grain derived from the wheat family- Triticum dicoccum to be exact. Farro contains fiber, magnesium, zinc, iron and vitamins esp. vitamin B3 (niacin), antioxidants (lignans) and phytonutrients. It is a whole grain, non-GMO, however, not gluten-free as it comes from wheat. One serving (1/4 cup dry) has 5g dietary fiber, 7g protein and 12% iron– not to mention zero sugar and saturated fat.  I felt like making a stew today so this served as a base. Since this particular “Farro” grain brand is from Italy, I made it with some Italian flare. 


Farro Italian Stew

Farro grainI used 1cup – 1 1/2 cups
White cannellini beans1 can organic
onion- 1 small
celery- 4 small organic stalks
carrots- 2 organic
sugar snap peas- a handful
potatoes- just a couple
tomato sauce- 1 can organic

garlic
cilantro
parsley


I made this in a crock pot! Throw it all in and wait for the bell! lol
