Vegan day 66: Crunchy raw salad

Honestly, if you chew each bite 30 times like we are suppose too lol- this salad would take an hour to eat and trust me- you would be full! Nutrients are packed in this salad everywhere- it’s basically super raw and alkaline!



Crunchy raw salad


Spinach greens
Cauliflower
Broccoli
Tomatoes- chopped
Yellow bell peppers- long strips
Cucumbers-sliced thin
Fresh Anise- sliced
Fresh Dill
Apple- sliced
Sunflower seeds un-roasted
Almonds- sliced and un-roasted
Flax seed oil
Olive oil- extra virgin
Balsamic vinegar


Spinach is ranked the highest in George Mateljan’s The World’s Healthiest Foods. It is in the green leafy family of vegetables. One cup of spinach is 1110% of the RDA for vitamin K and 294% of the RDA for vitamin A. Vitamin K is necessary for proper blood clotting and building strong bones; many people are interested in this to help prevent heart disease and osteoporosis. Vitamin A is important for many functions especially eyesight, tissue healing, new cell development, healthy teeth & skin and the immune system- it also serves as an antioxidant! Spinach is also a great source for manganese, folate, magnesium, iron (35.7% RDA), vitamin C, vitamin B2, calcium and potassium!
