Vegan day 71: Split pea soup





This package of peas has been staring at me for 2 months asking when I was going to make this nutritious soup and why haven’t I started sooner! 1/4 cup dry peas has 12g of protein and 15% of the RDA for iron. Peas are a great source of fiber and other nutrients- low to zero in fat and sugar!

Split pea soup

Green split peas- organic
Vegetable broth
Onion
Scallion
Garlic
Ginger
Celery
Potatoes
Cumin
Paprika
Cayenne
Italian spices


I was so into the spices that I forgot to add the carrots in and top it with some extra virgin olive oil. That’s ok – this soup is insane! 


I have to say that I love my crock pot. My brother bought it for my at least 5 years ago and it stayed wrapped up in a cabinet for at least 3 of those years. I can’t imagine winters in New York without this appliance! So, throw everything into the crock pot and turn it on lol– I used a 4:1 liquid ratio to peas. I used part vegetable broth and the rest water.
