Vegan day 123: Baked graffiti eggplant

Eggplant is delicious… no doubt- especially when covered in parmesan, mozzarella, breadcrumbs, tomato sauce or deep fried. Well… that’s how I used to eat it anyway! This is a tricky one when ordering out because it’s generally not vegan unless you get someone nice who will make it that way- no eggs, no cheese and if we are shooting for healthy- no frying! 
 
Is baked eggplant any good? I had to find out. Another item I bought at Foragers Market in Chelsea… “organic and local”… was this gorgeous “graffiti” eggplant.
 
Yes.. I admit it.. I bought it because it had a beautiful color and pattern that drew me in. I have probably cooked eggplant one or two times in my life but I wasn’t really sure how to bake it and make it not boring. Interestingly enough, eggplant doesn’t need much to taste good. I didn’t feel like dipping it in almond milk and whole wheat breadcrumbs which I’m sure would also taste good so with the advice of a chef friend- I got the ok to just dip it as it was in some organic corn flour and then just bake it. It was really that simple and quite tasty and fulfilling. Now I have a bunch of chef friends for the record who have promised to teach me how to cook something vegan… I’m waiting! lol
